Pecorino Romano is often used on pasta dishes. Its distinctive aromatic and pleasantly sharp, salty flavour makes it the preferred cheese for some pasta dishes with highly flavoured sauces. Sharpness depends on the length of maturation, which varies from five months for a table cheese to eight months or longer for a grating cheese. It’s considered a granular, hard and sharply flavored.
